Samara Joy Nielsen is an assistant professor in the Department of Sports Medicine and Nutrition. She is a nutritional epidemiologist with over 15 years of experience. She has worked in industry, government and academia. Nielsen has taught public health nutrition at Kansas State University and Food for Wellness at Shepherd University. Nielsen has worked extensively with the NHANES food and nutrition data including such topics as US yogurt consumers, US nut consumption, trends in fruit and vegetable intake, calories consumed from alcoholic beverages by US adults, the association between seafood consumption and blood mercury levels in adults and youth. Nielsen has most recently published a paper on the association between dietary fiber intake and periodontal disease in U.S. adults.
